Sweet Hot Love

I’ve seen it sitting around. On store shelves and Asian restaurant counters.  Cajun and Creole restaurants have it. Even Noodles & Company has it sitting out on every table. Sriracha hot chili sauce.

I always left it alone. I’m not really much on hot things anyway. I like jalapeno poppers and spicy chili, but that is where I usually draw the line.

I mean how good could anything that shade of red be?

The answer is very. If Heinz Ketchup and Tabasco Sauce had a child together, this stuff would be it. Tuong Ot Sriracha, affectionately called Rooster Sauce and Cock Sauce after the large rooster emblazoned on the front, is delicious. Don’t get me wrong, it is hot. Not smell it and burn your nostrils hot, but more like a slow burn so you want to have a drink after every bite or two. Rating a 2200 on the Scoville scale, Sriracha starts out sweet, kicks in the heat for thirty seconds to a minute, and then fades away into a nice tingling sensation in your mouth and stomach.
