Instructions:

Prepare the Jalapeños: Slice fresh jalapeño peppers lengthwise and remove the seeds.

Cook the Shrimp: Season shrimp with Cajun seasoning and cook until done. Let them cool slightly.

Make the Filling: In a bowl, combine cream cheese, sharp cheddar cheese, finely chopped red bell pepper, minced garlic, and chopped parsley. Mix until smooth.

Add Shrimp: Chop the cooled shrimp and fold them into the cheese mixture.

Stuff the Jalapeños: Fill each jalapeño half with the shrimp and cheese mixture.

Bake: Place the stuffed jalapeños on a baking sheet and bake at 375°F (190°C) for 15–20 minutes, until the tops are golden and bubbly.

Optional Broil: For a crispier top, broil for an additional 1–2 minutes, watching closely to prevent burning.
