🍋 Easy Lemon Curd Recipe

Ingredients:

  • 1/2 cup fresh lemon juice (about 2–3 lemons)
  • 1 tablespoon lemon zest (zest before juicing!)
  • 1/2 cup sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, cut into pieces

Step 1: Whisk the eggs and sugar

In a medium saucepan (off heat), whisk together:
– 3 eggs
– 1/2 cup sugar
Whisk until smooth and slightly pale.

Step 2: Add lemon juice and zest

Stir in:
– 1/2 cup lemon juice
– 1 tbsp zest
Keep whisking gently until fully combined.

Step 3: Add butter and cook

Place the pan on low to medium-low heat. Add:
– 1/4 cup unsalted butter (cut into chunks)
Stir constantly with a rubber spatula or wooden spoon for 5–10 minutes until thickened. Don’t let it boil!

Step 4: Strain and cool

Strain through a fine mesh sieve to remove zest and any egg bits. Then pour into a jar or bowl.
Let cool to room temp, then refrigerate.
