New Resturaunt in Linton: Daily Dish

On the tail of Jared’s post about Legends closing, I had to bring more food news.  For those of you that don’t know yet, there’s a “new” eatery downtown.  The Double Dog Trish’s Dishes The Daily Dish is located on East Vincennes street.  Catering mainly to the breakfast and lunch crowd, The Dish serves a nice assortment of sandwiches, salads, and miscellaneous food.  If you get there early enough, you can even enjoy a bowl of soupe du jour. Downtown Linton snuffs out flame at local BBQ joint

The smoke will no longer be rolling through the streets of Downtown Linton. According to a statement on their Official Facebook page, Legends Smokehouse will soon be closing its doors.

The restaurant, located at 12 North Main Street in Linton, opened its doors in August of this year and provided a new, finger lickin’ alternative to local foodies in their slow-smoked barbecue and homemade sauces.

A wall post from owners, Odus and Ronda Ball, claims that they have been “struggling to make it over the past few months.”

We are saddened to see another promising establishment disappear. Linton has already lost three other eateries (The Double Dog, 2010, American Pie Pizzeria, 2011 and Trish’s, 2011) within the past few years. Here’s hoping that another brave soul will find success in the Linton dining scene.

BBQ & Bluegrass at the park

This weekend I dropped in on the BBQ Cook-Off at Humphreys Park and encountered some joyous sounds from a small group of local musicians. I captured some video of this rare moment for your enjoyment. (See the second video after the jump)

As for the contest, five dedicated contestants battled it out to identify the best BBQ in town. Samples were available for the public to enjoy. Approximately 30 BBQ enthusiasts turned out to cast their vote.

Zucchini Pie [Recipe]

Zucchini Pie

After returning home yesterday from a short trip for work, I immediately checked the progress of my backyard garden and found the first ripe zucchini of the season. Unfortunately, it was beyond the prime picking window and had grown to mammoth size. Since large zucchini are not best suited for my favorite summertime dish, fried zucchini, I opted to transform it into another personal favorite, Zucchini Pie.

I can’t take credit for this recipe as I did consult with my Aunt, but I did make a few slight changes that turned out to be positive in the end. View the full recipe after the jump.

A Cabbage Recipe

Cabbage in the Garden

CABBAGE CASSEROLE:

  • 1 head of cabbage, chopped
  • 1 large yellow onion, chopped
  • 1 can Campbell’s Cream of Chicken & Mushroom Soup (Yes, the make it combined.  It’s available locally at Angell’s)
  • 1/2 cup mayonnaise
  • 1 1/2 stick butter, melted
  • 1 sleeve of Ritz crackers, roughly crushed
  • 1 cup shredded cheese

Combine the cabbage, onion, soup, mayo, and (1) stick of butter in an oven dish, then bake for 45 minutes at 350′.  Combine crackers, cheese, and 1/2 stick of butter and place on top of the cabbage mix, then bake another 15 minutes or until browned.

*** On a personal note, since I don’t measure ingredients, I’m likely to be using more like 1 cup of mayo than 1/2 c. because I add enough mayo to look approximately the same amount as the chicken & mushroom soup.  I’m also heavier on the cheese… likely closer to 2 cups than 1.

Additional Comments:

  • Be sure to bake the cabbage & onion well, so it’s browned on the tips of the small cubes of cabbage and onion.  It might take more or less in your oven than the recommended 45 minutes shown above.  Note: It’ll be watery if you don’t cook it long enough.

Some Variations:

  • If you don’t have Cream of Chicken & Mushroom, you can substitute Cream of Chicken.  (If you use just Cream of Mushroom, it doesn’t turn out as well).  If you don’t have either, you can combine some chicken broth, a small can of mushrooms, and some sour cream in a blender and use.  (Yes, I’ve done this, and it turned out well.)
  • For a low carb version, you can substitute crushed pork rinds for the Ritz crackers.
  • And, to tilt this recipe toward a main dish, rather than a side item, you can cook chicken breasts, then chop up and add to the cabbage & onion mixture.
